A Safe Ten-Minute Test for Fat Digestion

A quick, simple, and safe lab experiment on fat digestion is described. Olive oil is the fat used, and Universal Indicator indicates the pH changes as fatty acids accumulate during the hydrolysis. A bile solution and (or) pancreatin are added to the fat preparation and incubated in a water bath at 37° for 10 min.
